A note regarding the rind: I did not cut the rind away before baking. It is completely digestible, and you don't notice it much when your brie is cooked. When I'm devouring brie unbaked, I sometimes trimmed the rind merely because I don't take joy in it.
How do you eat brie en croute?
Brush the outside of the brie en croute with egg wash.
Add your favorite jam and nuts.
Cover the brie en croute in a puff pastry.
